Method — Step by Step

Step 1 — Dry Roast the Rava (Most Important Step)

Heat the kadhai on medium heat. Add rava and dry roast — no oil — stirring continuously for 4-5 minutes until it turns light golden and smells nutty and aromatic. Pour onto a plate and set aside. This step is what separates good upma from disappointing upma. Roasted rava becomes granular and non-sticky when cooked; unroasted rava clumps and stays raw-tasting. 

Step 2 — Boil Water

In a separate pot or in the same kadhai, bring 3-3.75 cups of water to a full rolling boil. Add salt. Keep at rolling boil — adding rava to simmering water (not boiling) increases lump formation.

Step 3 — The Tadka

Heat oil or ghee in the kadhai. Add chana dal and urad dal — fry until golden. Add mustard seeds and wait for them to pop. Add cumin, cashews (if using), green chilli, ginger, and curry leaves. Add onion and cook until translucent. Add any pre-cooked vegetables.

Step 4 — Add Boiling Water and Rava

Add the boiling water to the tadka in the kadhai. (Alternatively, make the tadka separately and use the same kadhai to boil water and add roasted rava directly.) Bring to a full boil.

Then add the roasted rava in a slow, steady stream, stirring continuously as you pour. The continuous stirring as rava hits the water is what prevents lumps. 

Step 5 — Cook and Rest

Once all rava is added, reduce heat to low. Stir continuously for 2-3 minutes as the rava absorbs the water and thickens. Cover with a lid. Let rest on very low heat for 3-4 minutes. Open, fluff gently with a fork. The upma should be cooked through, separate, and not sticky.

Squeeze lemon juice over the upma immediately before serving. Add fresh coriander. The lemon juice adds brightness that is the defining flavour note of well-made South Indian upma.
