      2 tablespoons ghee or butter

      1 bay leaf

      3-4 green cardamom

      2 cloves

      1 inch cinnamon

      1 black cardamom

      Half teaspoon white pepper powder — the signature Mughlai spice

      Half teaspoon cumin powder

      Quarter teaspoon cardamom powder

      Salt to taste

      Pinch of saffron soaked in 3 tablespoons warm milk 

To Finish

      250g paneer, cut into cubes

      3-4 tablespoons fresh cream

      1 teaspoon rose water or kewra water

Method

Step 1 — Make the Gravy Base

Combine roughly chopped onion, cashews, poppy seeds, ginger, and garlic in a pan. Add 2 cups water. Bring to boil and simmer for 15 minutes until everything is completely soft. Cool slightly. Blend to a very smooth puree — push through a fine sieve for a silky-smooth gravy. This cashew-onion base is the heart of shahi paneer.

Step 2 — Temper the Whole Spices

Heat ghee in the non-stick kadhai on medium heat. Add bay leaf, green cardamom, cloves, cinnamon, and black cardamom. Fry 30-45 seconds until fragrant and the spices swell slightly. Do not brown — the whole spices should bloom in the ghee, not roast.

Step 3 — Cook the Gravy

Add the smooth cashew-onion puree to the tempered ghee. Add white pepper, cumin powder, cardamom powder, and salt. Cook on medium heat, stirring frequently, for 8-10 minutes. The gravy will thicken and the ghee will begin to separate at the sides. Add saffron milk. Cook 2 more minutes.

Step 4 — Add Paneer and Finish

Add paneer cubes to the gravy. Gently fold in. Cook on low heat 3-4 minutes. Switch off. Add cream and rose water or kewra water. Stir gently. Taste and adjust salt. The gravy should be pale — white to very light orange from the saffron — rich, aromatic, and smooth.
