      Fresh coriander and pomegranate seeds

Method — Step by Step

Step 1 — Grind the Batter

Drain soaked urad dal. Grind in the mixer grinder or Nutri-blend with minimal water — as little as possible. The batter should be very smooth, thick, and fluffy. Do not add too much water — a watery batter gives flat, dense vadas.

Transfer batter to a bowl. Add salt, hing, ginger, and green chilli. Beat the batter vigorously with a whisk or your hand for 2-3 minutes. The batter should become lighter and slightly fluffy — it should float when a small drop is placed in water. This aeration is what makes the vadas light and spongy.

Step 2 — Air Fry

1.    Preheat air fryer to 180°C for 5 minutes.

2.    Grease the air fryer basket generously with oil.

3.    Wet your hands. Take a portion of batter, shape into a round flat disc approximately 5cm diameter with a hole in the centre (traditional vada shape) — or simply drop spoonfuls for easier shaping.

4.    Brush each vada generously with oil on top.

5.    Air fry at 180°C for 7 minutes. Open, flip each vada carefully. Brush second side with oil.

6.    Air fry 5-8 more minutes until golden-brown and cooked through.

Step 3 — Soak in Water

Even for air-fried vadas, the warm water soak is mandatory. Place the hot air-fried vadas in a bowl of warm water for 5-10 minutes. They will absorb water and become soft throughout. Gently squeeze each vada between your palms to remove excess water without crushing.

Step 4 — Assemble and Serve

Spread chilled thick curd in a serving dish. Place the squeezed vadas on the curd. Pour more curd over to cover completely. Top with: green chutney, tamarind chutney, chaat masala, roasted cumin, red chilli powder, fresh coriander, and pomegranate seeds. Serve immediately, or refrigerate covered for up to 2 hours before serving.
