Step 1 — Make the Dough

Combine rice flour, besan, sesame seeds, cumin, chilli powder, turmeric, and salt. Add butter and rub into the flour. Add warm water gradually, mixing as you go, until a smooth, soft dough forms. The dough should press smoothly through the chakli mould — if it crumbles, add 1 tablespoon more water; if it spreads, it is too wet.

Step 2 — Press the Chakli

Fill the chakli mould (press) with dough. Press spirals directly onto a parchment-lined plate or onto parchment cut to the size of your air fryer basket. Make 3-4 spirals per chakli. Standard chakli is 3-4 spirals, approximately 7-8cm diameter. Let the pressed chaklis rest for 5 minutes before air frying — this brief rest firms the shape. 

Step 3 — Air Fry

1. Preheat air fryer to 180°C for 4 minutes.

2. Carefully transfer chaklis to the basket (they are fragile before cooking). Space with small gaps.

3. Brush lightly with oil using a pastry brush.

4. Air fry at 180°C for 8 minutes.

5. Open carefully. Flip each chakli using two spoons (they are delicate). Brush the second side with oil.
